      • 2 cups water
      • Sugar or honey to taste

      1. Rinse the hawthorn berries thoroughly.
      2. Combine them with water in a saucepan, bring to a boil, then reduce heat and simmer for 30 minutes.
      3. Mash the berries occasionally to release their goodness, then strain the liquid.
      4. Return the strained liquid to the pot, add honey or sugar, and simmer for another 10–15 minutes until syrupy.
      5. Let cool, then store in a glass jar.
      6. Enjoy in tea, drizzled on breakfast, or straight off the spoon!
